You need to *explicitly* ask about veg options, and about *all* ingredients in an item, or have read their menu in advance, because they’re not really noted anywhere, and even when asked the truck staff, while friendly, aren’t great about being complete with their answer. If you read the menu you see pork, beef, and for the noodle dishes if you ask about the protein they’ll tell you about the beef and the chicken options. The fugu truck is kind of fantastic, but it’s vegetarian-​friendly in disguise, and if you keep mild forms of kosher (as I do), their menu isn’t particularly explicit. Did I mention they are super nice and friendly too? I need to stop raving about them before starting to sound like a creep. The quality of the food is definitely top notch everything is ridiculously fresh. You can tell just by his cutting skills everything is exquisitely cut and prepared, you don’t even see this often at a restaurant. Hands down the best food truck in bean!!! Their chef is actually a professionally trained chef unlike a lot chefs in the food truck business.
